Cheesy Chicken Calzone with Spinach and Mushrooms
Ingredients
1 lb frozen French bread dough, thawed
12 oz. cooked, chicken white meat, chopped
½ cup mushrooms, chopped
1 cup spinach, chopped
1 cup fat-free mozzarella cheese
salt and pepper
1 tbl garlic salt
1/8 cup egg beaters
1/8 cup fat free milk
non-fat cooking spray
Method
1. Remove dough from package and allow to rise until doubled.
2. Roll each loaf into 16 x 12-inch square. Add 3 ounces chicken to each loaf along with spinach, mushroom and cheese in equal parts, within 1 inch of edge. Lightly season with salt and pepper. Roll jelly-roll style, starting at narrow (short) end. Seal edges with water. Place on non-fat sprayed baking sheet. Cover and refrigerate overnight.
3. Before baking mix egg beaters and milk together and with pastry brush lightly coat each calzone to make dough golden brown. Lightly sprinkle each calzone with garlic salt.
4. Bake at 350 degrees for 25 minutes until golden brown.
