Ginger and Apricot Basted Chicken
Ingredients
(4) 8-10 oz chicken breast skin on with rib bones
(the bones will add about 2 to 4 ounces of weight)
salt and pepper
¾ tsp fresh ginger
2 Tbsp apricot jam
Method
1. Heat grill or turn on broiler.
2. Make a pocket by poking your finger through the skin membrane on the breast and season chicken breast with ginger, salt and pepper. (Keeping the skin on will ensure your chicken comes out moist and juicy.
3. Grill/broil until juices run clear about 8 minutes per side for chicken.
4. Baste chicken with apricot jam and cook another 3 minutes – Make sure to baste each side and get some of the jam inside the pocket your created.
5. Remove from grill/broil. Remove skin before serving.
(Although we keep the skin on during cooking we want to make sure to remove it before eating since it contains most of the fat)
