Grilled BBQ Chicken
Ingredients
(4) 8-10 oz chicken breast skin on with rib bones
(the bones will add about 2 to 4 ounces of weight)
¾ tsp cumin powder
¾ tsp chili powder
salt and pepper
½ cup BBQ Sauce*
Method
1. Heat grill or turn on broiler.
2. Make a pocket by poking your finger through the skin membrane on the breast and season chicken breast with cumin, chili powder, salt and pepper. (Keeping the skin on will ensure your chicken comes out moist and juicy.
3. Grill/broil until juices run clear about 8 minutes per side for chicken.
4. Baste chicken with BBQ sauce and cook another 3 minutes – Make sure to baste each side and get some BBQ sauce inside the pocket your created.
5. Remove from grill/broil. Remove skin before serving.
(Although we keep the skin on during cooking we want to make sure to remove it before eating since it contains most of the fat)
