Grilled Pork Loin Chop

Ingredients
(4) 6 oz  boneless pork loin chop lean
2 tbl   Lawyer’s Seasoning salt
1 tbl   garlic powder
1tsp   black pepper
  
Grilled Pineapple

Ingredients
1   whole fresh pineapple
2 tbl   chili powder

1. Heat grill.
2. In a small bowl mix seasoning together and evenly distribute among 4 pork loin chops.
3. Cut pineapple by first removing the tough outer skin using a sharp knife. Make sure to remove any eyes your knife missed as these are tough and not fun to chew. Slice pineapple into rings. Don’t worry about the core as it will soften while grilling.
4. Season pineapple with chili powder. The chili powder will bring out the sweetness in the pineapple and you really don’t taste it.
5. Grill pineapple about 4 minutes per side. Remember we are really just heating the pineapple. (Make sure to cook pineapple first once done move on to pork loin chops.) Once done remove from grill and cover to keep warm.
6. Grill pork loin chops about 6 minutes per side or until internal temperature reaches 165 degrees.
4. Remove from grill and allow to rest for 2 to 3 minutes to allow the juices to settle.
5. Serve pork loin chops with pineapple and enjoy.

Yield: 4 servings –  6 oz each (Pork loin)
 4 servings – (2) per slices per person (3 oz. per slice)
