Hoison Beef Stir Fry
Ingredients
12 oz round, eye/tip
1 tbsp minced garlic
¼ cup soy sauce
¼ cup hoisin sauce
1/4 cup water
½ cup sliced red bell pepper
1 cup chopped bok choy
½ cup bean sprouts
non-fat cooking spray
salt and pepper
Method
1. Slice beef round into thin strips about 1/8-inch wide and 3 inches long (partially frozen meat is easier to slice).
2. Spray wok or large skillet with non-fat spray and heat on high heat. Sauté garlic.
3. Add beef strips and stir-fry turning pieces constantly until beef is no longer red (about 3 – 4 minutes). Remove beef from pan and set aside.
4. Add soy sauce and water to wok or skillet. Add vegetables and cook until they are tender-crisp (3-4 minutes).
5. Push vegetables aside and add hoisin sauce and cook 1 to 2 minutes more.
6. Add beef back to wok/skillet and toss both beef and vegetables with sauce. Serve immediately.
Yield: 4 servings – 4 oz per person
