Poached Pear Flower with Chocolate Sauce

POACHED PEAR: 

Ingredients
1 cup orange juice
1/4 cup pear juice
2 tablespoons lemon zest
4 whole pears

1. In a small bowl, combine the juices and lemon zest. Stir to mix evenly.
2. Peel the pears and leave the stems. Remove the core from the bottom of the pear. Place in a shallow pan. Add the juice mixture to the pan and set over medium heat. Simmer for about 30 minutes, turning pears frequently. Don't boil.
3. Transfer the pears to individual serving plates. To make flower petals, simply cut pear in half, and then make thin slices. Take slices and place around pear placed in center of plate.
 
Yield: Serves 4 – 1 pear per person

FAT FREE CHOCOLATE SAUCE:
 
Ingredients
3/4 cup Splenda sugar blend
1/2 cup unsweetened cocoa powder
4 teaspoons cornstarch
2/3 cup fat free evaporated milk
1 teaspoon vanilla
 
Method
1. In a small saucepan, stir together Splenda sugar blend, cocoa powder and cornstarch.
2. Add milk and cook, stirring over medium heat until thickened and bubbly.
3. Cook and stir for 2 minutes more. Remove from heat. Stir in vanilla.
 
Serve the sauce warm or cool.
 
Yield: 2 cups – 1ounce (2) tablespoons per person
