Roasted Garlic Hummus
2 cans garbanzo beans, drained
2 whole garlic bulbs
¼ cup chopped red onion
1 tbsp fresh chopped parsely
1 tbsp cayenne pepper
1 tbsp fresh squeezed lemon juice
salt and pepper
non-fat cooking spray
Method
1. Preheat oven to 425 degrees.
2. Slice off top of garlic bulb making sure not to cut root end. Cut deep enough to expose most of the cloves.
3. Place foil on cookie sheet or small baking dish for easy clean up. Place garlic in dish and spray with non-fat cooking spray.
4. Place in oven and cook for 45 minutes, until garlic is completely soft and lightly browned.
5. Let garlic cool down and then squeeze garlic out of husk. Set aside.
6. In a food processor or blender, pulse garlic and onions until finely blended. Add garbanzo beans, one can at a time, and pulse to puree. Blend in parsley, lemon juice and salt and pepper until mixture is smooth.
You may serve this warm or refrigerate and serve cold.
Yield: 16 ounces (8 servings – ¼ cup per person)
