Sweet and Sour Coleslaw
Ingredients
3 cups shredded green cabbage
3 cups shredded red cabbage
1 cup sliced yellow peppers
1 cup sliced water chestnuts
¾ cup chopped snow peas
2 each chopped green onions
Dressing
¼ cup fat-free mayonnaise
3 tbsp Splenda brown sugar
2 tbsp rice wine vinegar
1 tbsp soy sauce
1 tsp minced ginger
1 tsp minced garlic
salt and pepper
Method
1. Place snow peas on microwaveable dish and microwave for 1-2 minutes until tender-crisp. Place in cold water to stop the cooking. Drain.
2. Place snow peas in serving bowl with cabbage, peppers, water chestnuts and green onions; toss well to combine.
3. In small bowl whisk together mayonnaise, brown sugar, vinegar, soy sauce, minced ginger and garlic; pour over salad and toss well.
Yield: 12 ounces (12 servings – ½ cup per person)
