Hey - I followed a modified vegan diet (only fish and eggs, but no poultry or dairy) for almost 10 years and it wasn't that difficult. There are lots of soy options that actually taste good. But, a year ago I added chicken and turkey back into my diet (I took up long distance running and I felt I needed more protein) and my total cholesterol went DOWN!
